One-hundred-year-old water
Junmai sake represents the pinnacle of sake brewing as the ingredients are literally only rice and water. Founded in 1625, the brewery we offer for tour is located near Mt. Haku in Ishikawa Prefecture. The pristine waters used in sake brewing began as rain and snow at the foot of Mt. Haku. The mineral-rich water is filtered slowly underground for 100 years before reaching the wells of the brewery. The fermentation process takes place in open tanks at low temperatures; therefore, winter is the season for sake making. The depth, purity, and deliciousness of pure rice sake is a true expression of Kanazawa culture. Come, join us for a unique cultural experience and tantalize your palate along the way.
What you’ll do
Go on a Junmai sake brewery tour and get a close-up look at the process of making sake. Then, to the fun part of tasting and comparing several of the craftsman’s sake.
Who can attend
Sake tasting is only available to those who are 20 years of age (legal drinking age in Japan) and above.
Drinking is prohibited for drivers.
Vegetarian/vegan dietary needs can be accommodated. Please inform us of any dietary requirements at checkout, including allergies.
What else you should know
The fragrance of sake is very delicate. Please do not to wear any perfume or strongly smelled cosmetics or fragrances, in order to recognize each note of sake.
