Junmai sake represents the pinnacle of sake brewing as there are no additives added in the production process. The only ingredients neccesary for creating Junmai sake are rice, water, yeast, and koji (rice malt). This leads to the creation of a sake that boasts of earthy tones and natural rice flavors. Founded in 1625, this brewery in Kanzawa is located near Mt. Hakusan in Ishikawa Prefecture. The pristine waters used in sake brewing begin as rain and snow at the foot of Mt. Hakusan, which is then filtered slowly underground for more than 100 years before reaching the wells of the brewery, giving it the name Hyakunensui, or One hundred-year-old water. With generations of traditional sake-making skills, this brewery utilizes the natural landscape of Kanazawa to brew its Junmai sake. After viewing a video about the history of sake and the brewery, tour the grounds of the brewery and visit the location of the Hyakunensui. Then, enjoy a sake tasting of the brewery’s selection of sake.

View a video outlining the story of sake and Kanazawa’s oldest brewery, then embark on a guided tour of the Hyakunensui. Finally, enjoy a tasting of a selection of the brewery’s sake.
Who can attend
Sake tasting is only available to those who are 20 years of age (legal drinking age in Japan) and above.
Drinking is prohibited for drivers.

What else you should know
The fragrance of sake is very delicate. Please do not to wear any perfume or strongly smelled cosmetics or fragrances, in order to recognize each note of sake.
