Kanazawa’s oldest sake brewery turns to nature to produce the finest Junmai sake.
Join sake brewing professionals on a tour of Kanazawa’s oldest sake brewery founded in 1625. The secret to the widely-regarded excellence of this brewery’s sake lies in their commitment to using only the highest quality rice and water in the brewing process. The mineral-laden water used is derived from the local mountains where it spent 100 years filtering underground before reaching the surface. Through the master brewer’s ingenuity and wisdom, the natural elements of spring water and rice are brought together with the yeast and koji microorganisms responsible for fermentation to create a high-quality, handcrafted sake. This guided tour will enlighten you on the concept of sake brewing and this particular brewery’s commitment to excellence. At the tour’s conclusion, visitors will have the opportunity to taste the top line, aged Junmai sake.

Sake tasting is only available to those who are 20 years of age (legal drinking age in Japan) and above.
