Flavors of the Natural Landscape

In the city of Kanazawa, its landscape is tucked in between a variety of water sources, one being the melted rain and snow that seeps underground at the foot of Mt. Hakusan. At Kanazawa’s oldest brewery, founded in 1625, this water is a major ingredient in their sake brewing. The secret to the widely-regarded excellence of this brewery’s sake lies in their commitment to using only the highest quality rice and water in the brewing process. The mineral-laden water used is derived from the slopes of Mt. Hakusan, from where it spent 100 years filtering underground before reaching the surface and into the brewery’s wells. Through the master brewers’ ingenuity and wisdom, the natural elements of water and rice are brought together with yeast and koji microorganisms responsible for fermentation to create a high-quality, handcrafted sake. The fermentation process takes place in open tanks at low temperatures; therefore, winter is the season for sake making. Embark on a guided tour of the brewery grounds, as well as a close-up look at the sake making process with an in-depth tour of the brewery. Then, enjoy a tasting of the brewery’s selection of Junmai sake.

What you’ll do

View a video outlining the story of sake and Kanazawa’s oldest brewery, then embark on a guided tour of the Hyakunensui (One-Hundred Year Water). Next, led by a professional brewer, tour the inside of the brewery and get a close-up look at the process of sake-making. Finally, enjoy a tasting of a selection of the brewery’s sake.
