Delights wrapped of history

Delicately sweet, richly aromatic confections are a hallmark of traditional Japanese cuisine. The characteristic flavors owe to the use of wasanbon sugar which is derived from an indigenous Japanese varietal bamboo. Commissioned in 1625 by Toshitsune Maeda, the feudal lord of the local Kaga clan, the confectioner in Kanazawa developed a technique of creating sweets from this sugar shaped in carved wooden molds. The result was choseiden, one of Japan’s most famous and enduring confectioneries. Join us in creating your own beautifully delicious sweets while immersing yourself in 18 generations of a family history producing confectionery delights wrapped in 400 years of Japanese politics and culture.

What you’ll do

Learn how to make higashi, a type of dry wagashi. Enjoy your delicious creations with matcha green tea. Afterwards, visit the museum display of intricately carved wooden confectionary molds.

  • Making higashi requires detailed hand work which may not be suited to those with long fingernails.

This experience is not a private workshop. There may be several other participants in the same session.
