A Savory Bite of Cultural History

A delicate snack with centuries of satisfying history within Japan, this treat offers both culinary and cultural enjoyment. The subdued sweetness of wagashi pairs artfully with the bitter notes of matcha tea, mellowing the strong taste to produce a lasting note of savory flavor and resulting in an intricate connection between the sweets and tea ceremony. With 72 recognized micro-seasons within Japanese culinary thought, the peak freshness of ingredients and seasonal timing are essential when crafting this confection. Aside from the more representative wagashi styles, this 7th-generation master confectioner, awarded the prestigious title of "Contemporary Master Craftsmen" in 2022, also specializes in a particular Kumamoto regional specialty: a large, koi sweet bestowed during times of utmost celebration, such as a wedding or the birth of a child. Learn directly from a celebrated master confectioner and savor the sweetness of a Japanese culinary tradition.

What you’ll do

Join the award-winning master at his store for hands-on instruction in making wagashi. Learn about local Kumamoto and seasonal specialties. Then, finish with tea and conversation with the master.
