The sake-making process requires meticulous observation but utilizes only a simple selection of ingredients: rice, pure water, and koji, the starter for fermentation. These three distinct things provide the depth of complex notes found in sake's flavor, making the quality of each crucial. At this sakagura founded in the Meiji period, an era of remarkable political and social change in Japan, community plays a pivotal role in producing unparalleled alcohol beloved by the region's residents. Only locally-produced rice from neighboring farms, and locally-sourced water flowing from nearby mountains, are used. Further contributing to this supportive ecosystem, even the team of expert brewers are tangerine farmers who spend the sake off-season cultivating other regional flavors. 5th-generation sake master proudly Shigeru continues the longstanding tradition of crafting sake for the community, in addition to conserving natural brewing methods using tools handed down since the sakagura's start. Sample the subtle elegance of sake produced at this historic brewery while participating in local culinary culture.

What you’ll do

Tour the brewery and learn about the local production techniques from a 5th-generation master. After seeing the process first-hand, sample several sake, as well as other regionally-enjoyed alcohol.
