Nearly nothing is as representative of Japanese cuisine as sushi is. Variations of the dish have existed in Japan for countless centuries, such as nare-zushi, a fermented fish meal preserved with salt and rice dating back to the 10th century, but the menu came into true form during the Edo Period with the creation of nigiri-sushi. This ancient staple utilized fresh fish caught from Tokyo Bay and used vinegar and fermentation methods to balance preservation with flavor, serving up satisfying cuisine from early morning to late night in the streets of Tokyo (then known as Edo). At this Michelin-rated sushi restaurant, led by a 3rd-generation sushi master, the typically Kanto style is transported to the shores of Kyushu, where he combines a longstanding culinary tradition with local Kyushu fish and flavors. The temperature of the water, the amount of oxygen, the ratio of sunlight hitting the surface, and the depth of the ocean all impact the quality of fish, especially in a dish like sushi, where rice and seafood are the only key ingredients. Kyushu, located in an optimal location with access to a prime selection of healthy fish, then serves as an ideal - if not unconventional - setting for Edo's representative dish. He prioritizes three values in his sushi - sendo (freshness), anbai (balance), and hontegaeshi (hand crafting) - to create a simply unforgettable meal.

Under careful guidance, learn how to make Edo-mae sushi straight from a 3rd-generation sushi master. Enjoy a selection of both your own creations and those made by the chef after instruction ends at a Michelin-star restaurant.
