"Milk of the Sea" Meets Whiskey

Stacked atop a plate of ice are an overflowing number of fresh oysters, caught and served straight from the waters visible just outside the window. Nothing pairs better with the salty, savory taste of Akkeshi's "milk of the sea" (the nickname for oysters In Japanese due to the creamy texture and flavor) than whiskey, distilled and produced right in the center of the region. Dribbles of peated whiskey on top of the raw oyster add a complex depth of flavor to the tang of the ocean. The same nutrients flowing from the marshland that forms the peat for whiskey filter into the delta, feeding the ecosystem and influencing the superb flavor of the oysters. The topography of the Akkeshi coast also supports to sustain diverse populations of fish and other sea creatures, including clams, kelp, and salmon. A 3rd-generation fisherman and a lifelong native of Akkeshi, Hitoshi is dedicated to producing oysters with maximum flavor impact, especially when consumed raw. Far more than just a fisherman, he also operates a reservation-only oyster bar that artfully combines all of the local tastes of Hokkaido.

What you’ll do

Strap on your life vests and join Hitoshi on his boat to tour the oyster farms, learning more about the ecosystem and industry. Then, return to shore for a savory meal of fresh seafood, prepared in various ways and paired with local Akkeshi whiskey.

What else you should know

  • Drinks (whiskey juice, etc) can be ordered during the experience. Please make payment directly to the host when ordering.

  • If ocean conditions are rough, the boat tour of the oyster farm might not be possible, in which case the host will prepare other activities showcasing the oysters and local culture.
