From 700+ pound bluefin tuna to snow crabs and spider crabs and matsuba—from fish flying through the air and auctioneers’ calls permeating the general hubbub, the Japanese fish market is a cacophony of exchange between fishermen, vendors, restauranteurs, and local shoppers. With an economy and cuisine dependent on close proximity to the ocean, Japan has hundreds of years of history relating to the development of these centers of community. Many visitors to Japan might first think of Toyosu Market, formerly Tsukiji Market, an almost Mecca-like destination for foodies and tourists alike. From as early as 5AM, lines extend around corners to try a bite of local Japanese marine delicacies. However, for most locals, the smaller markets provide more space and range, more opportunities to connect with the fishermen and vendors. Kawasaki Wholesale Market is no exception. This experience, guided by local izakaya owner and chef Masaru-san, allows you to dive deeply into the ins-and-outs of the Japanese fish market, learning about ingredients, fishing practices, sustainability, and traditional cuisine. And, if you choose, join Masaru-san after for a meal at the izakaya, expertly prepared from the ingredients selected during your market tour.
