The Sharpest Knife in the Drawer

Evolving from the meticulous techniques of Japanese swordmaking, the tradition of Yamagata knives dates back over 650 years. Known as uchihamono, the blades are a delicate balance of design and function, each hammered and shaped by hand. The unique metal forging process involves both “cold forging” and “free forging,” during which the knives are cooled and reheated and then shaped without any molds. Third-generation bladesmith Daisuke-san continues the tradition like his father and grandfather before him, having learned solely through direct observation and imitation. In this experience, take inspiration from their family practice of apprenticeship and see the craftsmen at work crafting uchihamono. Learn about the traditional metalworking process, and take home a special gift forged by the masters.
