Local legend in Akita Prefecture tells the story of a fierce dragon who watched over the Minase River. Falling in love with a beautiful princess from the nearby town, the dragon blessed the river and countryside with abundance. It is this river and its pristine water which gave birth to a special miso and shoyu brewing tradition in Akita. With recipes dating back over 150 years, this exclusive miso atelier blends together exquisite local tastes and high luxury, one resulting in the receipt of Japan’s prestigious “Good Design Award.” In this experience, enter into a miso and shoyu brewery and learn about the creation process from rice to bottle. Then, enjoy an evening of fine dining and a visit to a stunning tearoom, each incorporating the brewery’s unique products and flavors.
