Learning the traditional hands-on method of making buckwheat soba noodles

The origin of Izushi-style buckwheat soba is generally attributed to Sengoku Masaaki, a feudal lord, who was transferred from Ueda Castle to Izushi Castle in 1706.  Sengoku brought Shinshu buckwheat soba masters with him who, alongside local soba masters, developed what is now recognized as Izushi’s unique style of buckwheat soba.  While in most areas of Japan soba is served in soup bowls or sieve-like bamboo plates, Izushi soba is served on five small, locally crafted Izushi-yaki porcelain plates accompanied by broth in a sake cup and condiments on the side.  The presentation feels quite elegant for a comfort food dining experience. 

Currently, the small town of Izushi boasts about 40 soba shops which are regarded as among the best in the entire Kansai region.  Join us on a tour led by our host Satoru who has been actively partnering with local farmers to grow and mill buckwheat into flour for a 100% locally produced soba.  Here, you will enjoy learning the traditional hands-on method of making buckwheat soba noodles while absorbing the history of Izushi.

What you’ll do

After changing into a uniform, your experience begins! You’ll learn about soba flour and different kinds of soba and then knead and cut soba noodles. Then enjoy your own handmade soba noodles. You will learn how to make soba in detail from the owner, who is always pursuing new possibilities of traditional yet innovative soba.

What you should know

  • If you have any allergies, let us know at checkout.

  • You’ll need to take off any accessories on your hands and wrists during the masterclass.

  • If you have long nails, you’ll be provided rubber gloves to wear.

  • Drinks are not included. Please pay the restaurant directly for any drinks you order during the experience.
